About SUSU

We’ve had a lot of people ask where the name Susu comes from, and it’s actually a pretty crazy and kind of serendipitous story.

When we first imagined this concept – a thoughtful wine bar in a humble little room inspired by some of our favourite places and fondest memories – we struggled to come up with a name that we thought evoked the idea of what we were trying to create. After a couple of months we came up with a name that we loved but were recommended that we wait to do an official name change until a few other business setup items had been completed. Considering how unique the name was, we figured it’d be fine to wait. Fast forward to a month or so later when we went to register the name only to find out that somebody else had registered the same name in Vancouver just a day before!

Considering the obscurity of the name and the timing, we only assumed they had heard us speak about the name somewhere and decided to take it for themselves.

We found ourselves sitting around a table discussing the insanity that had just happened and wonder what we would do. Then one day it came to us, one of our favourite wines made by a god father of sorts in the natural wine scene, Frank Cornelissen’s Susucaru had a similarly crazy story behind its name. The day the fieldworkers went to harvest the grapes for the first vintage, they arrived at the fields to find half the grapes had been picked by thieves in the night. They exclaimed “Susucaru!” which in Sicilian means “They Stole It!”.

This story resonated deeply with us, so we figured we’d pay homage to one of our favourite wines with a similar story, hence, Bar Susu was born! And we couldn’t be happier that it happened the way it did!

WINE

Our wine list highlights artisanal producers that believe in sustainable action and honest winemaking practices. We focus greatly on organic, biodynamic, natural, and low-intervention wines. If this sparks your curiosity – great! Come say hello and have a glass, we love to chat!

BEVERAGE

Our bar folk are a curious bunch. We like to push the envelope a touch when it comes to cocktailing, putting unique expressions together with flavours that use novel ingredients. We don’t take ourselves too seriously, so expect a lot of fun when it comes to our cocktail list. Though, nothing is short of being delicious.

Our seasonal menu is always inspired by a cheeky, abstract concept, carefully putting flavour together to highlight our big portfolio of Italian-inspired bitter liqueurs, vermouth, and the odd sherry thrown in for good measure. Have fun asking us about each drink, they all have a story. 

Don’t enjoy alcohol? We always have some lovely sips for you! Or simply tell us what you like and we will rustle up something delicious. Either way, we’ve got you.

We started up as a pop up, but we’re definitely here to stay. Discerning guests can enjoy a wonderful dinner at the bar, or simply enjoy a drink and a few snacks into the evening.

FOOD

Our menu features a diverse range of dishes, revolving around locally sourced produce, that has been carefully crafted to complement our wine selection, creating a perfect pairing experience. Embracing the beauty of seasonal ingredients, we adapt our offerings according to the farmers’ bounties and the fresh catch from local fishermen. Our culinary philosophy centres on clean and bright flavours, and we love being playful with the presentation of each dish.
